Extra large shrimp with mousse and bread crumbs pannfried
Make mousse: cut off shrimp tails & 3 shrimp cut up. Put in food processor. Add egg, garlic & s&p. Mix 20 sec. Add parsley. Makes 1 cup.
Shrimp prep- on plastic wrap, line up 4 shrimp per serving in a row. Top with 1/4 mousse & coat with bread crumbs. Flip over and repeat mousse and bread crumbs. Do same for other serving. Cover with plastic wrap and refrigerate tail ready to cook.
Make salad dressing: mix together the sherry vinegar, walnut oil, s&p.
When ready to cook, carefully place the lined up shrimp in ore heated frying pan- with canola and butter heated over med heat. Cook shrimp @4 minutes per side til brown and cooked through.
Serve on top of the greens.
