Divide the shrimp in half. Put one half into food processor and grind it up. Transfer shrimp to a bowl and add the whole shrimp to the bowl.
Add celery, onion, bell pepper, garlic and parsley to food processor and pulse-grind to a fine chop. Add to the shrimp. Add half a palm of Old Bay crab seasoning, hot sacue, lemon zest, salt and pepper. Stir to combine.
Heat large skillet over medium/high heat. Add olive oil. Scoop out 4 mounds of shript mixture and pat down to form patties. Fry 3 to five minutes on each side. Serve on toasted with mayo and salsa, or taco sauce.
