Shrimp Fettuccine Alfredo (Cooking Light)

1 tablespoon Butter

3 cloves Garlic minced

1 tablespoon Flour

1 1/3 cups Lowfat Milk

5 ounces Parmesan grated (1 1/4 cups)

2 tablespoons Reduced fat cream cheese

1/2 teaspoon Salt

1 pound Shrimp peeled & deveined

1 teaspoon Olive oil


Melt butter in a medium saucepan over medium heat. Add 2 garlic cloves; cook 1 minute, stirring frequently. Stir in flour. Gradually add milk, stirring with a whisk. Cook 6 minutes or until mixture thickens, stirring constantly. Add 1 cup Parmesan, cream cheese & salt; stirring with a whisk until cheeses melt. Set aside. Heat oil in a skillet over medium heat. Add garlic clove & shrimp & cook until pink. Toss shrimp & sauce over either pasta or zucchini noodles. Sprinkle with remaining 1/4 cup Parmesan.
