Toss cooked orzo with little olive oil, lots of crushed basil, feta and parmesan cheese. Spread in a 8x8 pan.
Toss raw shrimp with salt, pepper and 1/8 tsp crushed red pepper.
Saute in a hot pan 1 minute on each side until pink. Remove from pan.
place in 8x8x on top of orzo.
Add diced tomatoes, wine, sugar, salt and basil to taste. Simmer 15 minutes. Pour over shrimp & orzo. Add remaining 1/4 of feta
If cooking immediately, bake 10 min at 350 until feta browns.
Makes 2 people. make sure you have extra sauce if saving, orzo absorbs a lot.
