Suggest a better descriptionIn an iron skillet, saute the onion and celery in the olive oil. Add the tomatoes, bay leaves, thyme, okra, lemon-pepper seasoning and House seasoning. Pour in the stock and cover the pot. Gently simmer for 30 minutes. Remove from heat and stir in the shrimp. Prepare the topping: preheat the oven to 400?. Mix together the egg and milk. In a separate bowl, combine the muffin mix and add the egg-milk mixture. Mix until it is just well blended. Drop by the tablespoon on top of the shrimp mixture, leaving the center uncovered. Bake for 15-20 minutes.
