Place avocado in a bowl. Top with tomatoes, onion and cheese. Spoon one half of the vinaigrette over veggies. Cover and chill 30 mins to 3 hours.
Fill plates with lettuce. Spoon marinated veggies on top. Top with cooked shrimp. Pour remaining half of vinaigrette over each plate.
