Heat oven to 350 degrees.
In a bowl, combine salt, pepper, garlic and shrimp and lemon juice and let sit for a few minutes. In a large skillet heat olive oil over medium heat. Add wine and simmer till reduced to half. Melt butter and add shrimp and shallots and cook for a minute. Do not fully cook to pink; you only want to cook them halfway.
Transfer the shrimp, if there is a lot of liquid, only add about half (max 1/2 cup). Mix in 3/4 cup of Parmesan.
Melt 4 tablespoons butter and mix with panko bread crumbs and 1/4 cup Parmesan Cheese. Sprinkle on top of the shrimp mixture. Bake in oven for 10-15 minutes or until golden brown.
Boil water, a decent amount of salt and a drizzle of olive oil. Add angel hair and cook for 3 minutes.
Serve shrimp over angel hair. If angel hair is dry, feel free to drizzle olive oil or melted butter and extra parmesan.
