A lighter, very delicious recipe.
Dissolve salt and sugar in water in a large bowl. Add the peeled shrimp and place in the refrigerator for 15 minutes.
Heat 1 Tablespoon of oil in sauce pan and heat to high heat. Add shells and sauté until brown and spotted. Remove from heat and add wine and thyme. Return to low heat and simmer 5 minutes.
Strain stock , pressing shells to remove liquid. There should be about 2/3 cups stock. Add a little wine if not enough stock.
Wipe the pan and heat other tablespoon of oil. Add garlic, pepper flakes, and pepper. Heat for three to five minutes.
Add stock and shrimp. Cook five minutes covered.
Meanwhile, in a small bowl mix wine and lemon juice and cornstarch until cornstarch is dissolved. Stir into shrimp mixture wth butter. Serve over pasta, sprinkle with parsley.
