Arrange jumbo shrimp in a single layer on a platter or shallow pan.
Combine all ingredients and sprinkle half of mixture liberally over shrimp.
Turn shrimp and sprinkle seasoning on the other side.
Cover and refrigerate for at least one hour.
Saute (in olive oil) or grill (I spray with olive oil if I'm grilling) shrimp until pink on both sides.
