While you cook the Rigatoni, combine the shrimp and garlic in a food processor and pulse for 1 minute. Add the egg and process until smooth. Add the heavy cream gradually, processing to form a smooth paste.
Make the Sauce.
Sweat the garlic and shallot in the olive oil in a small saucepan over medium heat until tender. Add the wine, stirring to de-glaze.
Add the bay leaf and cook until the mixture is reduced by 3/4. Add the cream and cook until reduced by 1/2.
Keep warm until ready to use.
Construct the Dish.
Discard the bay leaf and stir in the butter, lemon juice, 1 teaspoon of thyme and the basil. Season with salt and pepper.
Spoon half the shrimp mixture at a time into a piping bag fitted with a small round tip and pipe into the cooked rigatoni.
Add the stuffed rigatoni into the Chardonnay Thyme Sauce and cook until the shrimp mixture is cooked through.
Garnish and Serve.
Spoon onto serving plates and garnish with fresh crab meat and in butter sauteed tomato.
Fresh bread or Crostini is a wonderful accompaniment for this dish.
