In the food processor or blender blend together the shrimp, onion, ginger, and salt and pepper. With the motor running, drop the egg whites through the feed tube and process until the mixture is well combined. Spread the shrimp mixture onto the strips of bread and coat the tops with bread crumbs. Chill until ready to cook. Heat oil in a large skillet, when hot, fry toast on both sides until golden brown.
