1) Put the water in a pot to boil
2) Tear out outermost leaf of the lemongrass and pound lightly (can slice into strips)
3) Chop the galangal into slices
4) Break kaffir lime leaves (tear)
5) Peel garlic
6) Slice chillies according to preference
7) Add all of the above into the soup
8) Cover as soup just about to boil, leave for 10 minutes after boiling
9) Add diced chickens and turn fire to low
10) Add mushroom and tomatoes (tomatoes in big chunks)
11) Add 5 tbsp of fish sauce and 1 tbsp of sugar (can add more later depending on taste)
12) Boil for another minute of too and turn off the heat
13) Add lime (pre-squeezed) and a handful of cilantro (heat off)
14) One last stir
