Bring to boiling; reduce heat. Simmer, uncovered, until liquid begins to thicken. Return meat and any accumulated juices to the skillet. Simmer, uncovered, for 5 to 10 minutes or until meat is desired doneness (145°F for medium-rare doneness or 160°F for medium doneness).
To serve, remove meat from tomato mixture; cut into thin slices. Stir parsley into tomato mixture in skillet; serve over meat.
