Juice the potatoes and onions. Reserve the juice, after letting the starch settle to the bottom.
In a large bowl, add the potato and onion pulp from the juicer. Top with the juice (without the starch), flour and eggs and mix well. Add salt and pepper.
Form into pancakes and grill in a little oil. Optionally: Serve with a side of apple sauce.
