Cut the potatoes into french fries. Leave the skin on. Fry up the bacon and crumble into bacon bits.
Deep fry the french fries at 350F for 4 minutes. Put fries on a platter and liberally salt, then sprinkle the shredded cheese. Using a spatula, fold the fries over until all fries are coated with cheese.
Place cheese fries in a foiled lined bowl, and then place under a broiler to get all cheese melted.
Top with the bacon bits, chives, jalapenos. Serve with ranch dressing for dipping.
