Very similar to Hash Brown Casserole!
Grate cheeses in food processor. Place in large bowl and mix. Grate potatoes and place in bowl with cheeses. Toss to mix.
Add to the bowl the soup, mushrooms, egg, butter, sour cream and salt/pepper. Pour into cheese and potato mixture and blend thoroughly.
Pour into a greased pie pan. Drizzle the truffle oil on top. Bake, uncovered, at 425° F for 30 minutes or until edges are browned. Bake at 350° F for 30min. Let stand 10 minutes and serve in slices.
