Preheat the oven to 325.
Press the cookie dough into a pie plate (to cover the bottom and to go up the sides at least 1/2 way).
Mix together the cream cheese, sugar, eggs, and apple pie spice until smooth.
Bake for 25-30 minutes, until middle is set.
Let cool for 30 minutes, then top with apple pie filling.
Refrigerate overnight before serving.
