A simple Beef Stroganoff recipe for beginners. Excellent way to impress the girlfriend; my girlfriend still licks the plate clean after 23 years.
1 - Set 3 liters of water to boil in a large pot. Continue preparation while waiting.
2 - Slice the steak into long thin strips, cutting across the grain. For extra tenderness, sliced thin and at an angle.
3 - Thinly slice onions and mushrooms.
4 - When water boils, add half the oil (50 ml) and then the pasta slowly and stir to keep the pasta strands separate as much as possible. Set a timer to the cooking time on the package. Remember to stir occasionally while it cooks to help keep the noodles from sticking. Test when timer goes off and then if cooked, remove from heat and drain in a colander.
4 - Heat a large frying pan to medium high and add half the oil (50 ml) and coat the pan.
5 - Add sliced steak and saute for 3-5 minutes, or medium rare.
6 - Add onions and mushrooms and saute until the onions are semi-transparent.
7 - Add cream of mushroom soup and black pepper and garlic and stir in.
8 - Simmer until the sauce is fully integrated and turned a golden brown.
9 - Reduce heat and stir in the sour cream.
10 - Remove from heat and serve over the fettuccine
For extra work but extra yummy, double the mushrooms and saute on high heat before starting any cooking. This gives the mushrooms and sauce a stronger flavor. Also play with the pepper and garlic; the perfect balance is when you can just taste both of them but it does not dominate the flavor.
