Suggest a better descriptionPrepare the pasta according to package instructions. I cooked mine in boiling water for 9 minutes with a touch of salt. Drain the pasta when it's al dente and set aside. In a large skillet over medium high heat, drizzle some oil in the pan and sauté the onions and garlic for about 5 minutes. Stir in your pasta, the rest of the olive oil, chipotle sauce and cheeses. Reduce heat to medium and continue to stir until combined well. Mix in the heirloom tomatoes, oregano and spices. Serve immediately with extra parmesan and fresh basil or oregano.
Notes: *I used Cabot Chipotle Cheddar. An aged cheddar will work well too but chipotle flavor may not be as strong.
