On Sunday, make a up five boxes of salad to take to work or school for your lunch. Healthy and cost saving!
This is for packed lunches. Have 5 small air-tight boxes to fill as follows. (I just use the plastic ones my Indian takeaway comes in)
Prepare the couscous as the packet instructs. Set aside until it has cooled. You can chop your cheddar cheese into cubes while you're waiting.
1. Spread a layer of couscous along to cover the base (about half a CM)
2. Add a handful of the crispy salad ingredients.
Distribute between the boxes using your judgement about about how much to put in.
3. Then add all the other food items, again distributing evenly between the boxes.
**DO NOT add the dressing yet.
4. Put on air-tight lids and pop your boxes of salad in the fridge to keep until needed.
5. The Mayonnaise, Vinegar or dressing of your choice should be added the morning before you go to work / school.
If your boxes are not packed too tightly, the salad will be tossed around as you transport it in your bag.
Note: The crispy salad pack contains: lettuce, strips of carrot, white cabbage and red cabbage. If you cannot find it, use a different one, or get these ingredients separately.
