I don't use any broth for my chickens. We cook on low for 8 hows or high for 4 hours. Season well with your favorite seasoning. If you want crisp skin toss it in the broiler for 20 minutes.
Edit, when your done with the chicken pick it clean and put everything non edible in the crock pot with 10-12 cups of water and some veggies and 12 hours later you have great chicken broth.
