This is a great, quick and easy breakfast. The salsa can be made ahead of time and will last a while in the fridge to make these throughout the week.

Mix tomato, red onion, jalapeno pepper, garlic, and salt in a bowl. Squeeze a little lime juice to coat the mixture and mix in thoroughly. Store refrigerated in an air-tight container for future huevos rancheros or other tasty snacks!
Pour the can of black beans into a microwave safe bowl and microwave until heated.
Heat a skillet on medium to medium-high with a light drizzle of olive oil (it will take some experimenting on your stove to get the exact temperature right). Lay one tortilla in the skillet. When it just starts to turn a little golden brown on the bottom, flip it over.
Sprinkle about a half-ounce of cheese onto the tortilla. Once the cheese starts melting, crack an egg directly ontop. Don't worry if it's messy! Sprinkle with salt and pepper if desired.
Once the egg just starts to turn white around the edges and slightly onto the tortilla, flip the entire arrangement and cook for a few minutes.
Flip the entire thing back over onto a plate and add some spoonfuls of salsa, beans, sour cream, and maybe a few shakes of hot sauce. Enjoy!
