Lightly toast the pine nuts in a dry saute pan. While toasting, place the remaining ingredients into a blender. Chop in the blender. Add pine nuts when at any time. Pulse to achieve desired consistency.
This can be used as a spread on sandwiches, a sauce for cooked pasta, etc.
Adding oil just adds fat. If tossing with cooked pasta (2-3 oz. dried per serving), one can add more cheese. a pinch of sea salt, and oil at this time if so desired.
