By adding butter, vinegar and salt some of bitterness of spinach is taken away.
Steam full size or baby spinach. Remove from heat add butter, vinegar and salt. Serve immediately.
If sits too long before eating will have more bitter flavour best eaten hot and immediately. I call family for supper when spinach is steamed and before adding butter, vinegar and salt so everyone arrives in time to eat.
