These are delicious and much cheaper than store-bought dried tomatoes if you use your own tomatoes from your garden.
Slice tomatoes thinly into a bowl. Whisk the last 3 ingredients together and pour over tomatoes. Let marinate in the refrigerator for at least 15 minutes. Remove tomatoes from dressing with a slotted spoon and place on a teflex sheet. Dehydrate until chewy but well dried. Store in zip-lock bags in refrigerator or in a jar filled with olive oil in the cupboard.
To rehydrate tomatoes for salads, pizza toppings, or other dishes do the following:
1. Soak the desired amount in a little water to cover for an hour or so. Squeeze the water out.
2. Place the tomatoes in a covered dish and store in refrigerator.
This recipe is very versatile and easily multiplied. If I have a lot of garden tomatoes and want to make them several days in a row, I reuse the marinade and add a little bit more oil and spices to the new batch. These are great for snacking or various recipes. I also often use garlic powder rather than fresh garlic when I'm in a hurry.
