Rinse the rice 3 or 4 times until most of the starch is removed. Place in a pan with the water, bring to the boil, then immediately cover & simmer on a low heat for 25 minutes. Do not stir! Once cooked, remove from heat & allow to stand for 5-10 minutes before transferring to a large plastic bowl to cool. Do not refrigerate.
Meanwhile, prepare your fillings. This can be basically any combination you think would be tasty! Try to get at least one veg in every roll.
Once the rice is cool, combine the vinegar,sugar and salt and stir through the rice.
Lay a piece of cling film on a folded teatowel. Place a sheet of nori on top of this, and cover with a thin layer of rice, pressed firmly into a flatish layer.
Add a thin line of filling to the lower 1/4 of the rice, along one edge. The more filling you add, the harder it will be to roll, just make sure you have a consistent thickness end to end.
Use the cling film & tea towel if necessary to help you roll the seaweed. Try to maintain a tight curl across the length of the roll. Once the edge of the cling film has come nearly full circle, peel it back to allow you to continue to roll the nori. Once you have completed the roll, wrap it tightly in cling film for a few minutes to help it maintain the rolled form. Repeat until the rice is all used, which should be three rolls.
Remove the rolls from the cling film and slice each into 8 cross-sections of the roll. Sprinkle with sesame seeds if you like.
