While this simple syrup may be used for other things, I'm entering here specifically as a supplement to the Dirty Mojito recipe I'm also posting. (Thanks to my friend Jessica for both recipes.)
Dissolve the sugar in the water over low-medium heat. (Do not allow to boil.) Allow to cool then transfer to a sealed pouring container. Store in refrigerator.
