This is a perfect basic recipe for a quick and simple tomato sauce. Ready in 20 minutes, this makes a great weekday recipe when coming home from work. You can also serve this as a sidedish.
Heat olive oil in a deep sauce pan (or small pot) over medium high heat.
Add chopped onions and cook for 2 minutes.
Add chopped garlic and cook for another minute.
Reserve 1 tablespoon of chopped basil for decoration.
Add tomato paste and equivalent of 3 cans of water (about 450 mL), chopped plum tomato, basil and sugar.
Allow to bring to a slow boil and reduce heat to medium low and simmer for 20 minutes stirring occationally.
This will reduce the sauce and let it thicken a little bit.
Cook for favorite pasta as per directions, drain and return paste to cooking pot.
Sprinkle optional truffle oil over pasta and toss.
Add tomato basil sauce and cover pasta for 5 minutes. This will allow pasta to soak up flavors.
Toss one last time and serve with reserved chopped basil.
NOTE: I love adding sliced italian sausage to this recipe. Cook at the same time as your pasta and slice.
