Birthday Cake Mug Cake:
1. Add yogurt, almond milk, egg, and vanilla extract to a mug. Use a fork or wire whisk to combine until the egg is beaten and no lumps remain.
2. Add coconut flour, sweetener, baking powder, and salt to the wet ingredients. Stir to combine. Use a small spatula to scrape the sides and bottom of the mug to make sure the ingredients are thoroughly mixed.
3. Fold in the sprinkles.
4. Cook in the microwave for 60 seconds on power level 100. The cake is done when a cake tester or toothpick inserted into the center of the cake comes out clean and the cake pulls away from the sides of the mug. If the cake is not done after 60 seconds, continue cooking in 10-second bursts until cooked through.
5. Let the cake cool for 5 minutes before eating. If frosting the cake, let it cool to room temperature before frosting
