easy summer supper, I believe I got it from Cooking Light magazine
Place rind, rosemary, 1 T. oil and 1 t. garlic in ziploc bag, Cut chicken into 3/4 " pieces., add to bag, seal, and marinate 1 -2 hours.
Prepare grill
Combine remaining olive oil, garlic, lemon juice, salt & pepper in a small bowl.
Thread chicken and zucchini onto skewers. Place on greased grill rack. Grill about 12 minutes, turning once. Drizzle with lemon juice mixture.
