In a 4-quart saucepan, sauté onion, chili pepper, and green pepper in olive oil over medium-low heat until onions are soft (about 8 minutes).
Add garlic; stir in zucchini and carrot. Cook over low heat for 2 minutes.
Add beans, tomatoes, chili powder, cumin, Italian seasoning, pepper and water; stir.
Bring mixture to boils reduce heat and simmer for about 35-45 minutes. You can also transfer to a crock pot for simmering.
Serve with grated cheddar cheese and Fritos™?. Some people also like applesauce on their chili.
