My favorite winter recipe, this chili is easy and quick.
Heat oven to 400° F. In a large skillet (cast iron is best), over medium heat, cook the sausage and crumble it, until no trace of pink remains, about 7 minutes. Add chili seasoning and cook for 1 minute. Add the beans and salsa and simmer for 3-4 minutes.
In a bowl, prepare the corn muffin mix, stirring in the cheese. If using cast iron skillet, spread the corn muffin batter over top of the chili mixture. Otherwise, transfer the chili to a 9 x 9 baking dish and spread the corn muffin mix over the top. Bake until golden, 15 to 20 minutes. Let cool for 5 minutes before serving.
