Add the sugar, lemon peel, lemon juice and cinnamon stick.
Set crock pot to low and cook for 6 - 8 hrs. Stir apples occasionally, apples will slowly become a delicious applesauce. Remove cinnamon stick and use an immersion blender to blend until smooth or if you prefer a chunky sauce, leave sauce intact. (I used a whisk, which gave the sauce a nice chunky consistency.)
Can and process according to your canners manufactering instructions.
****(Use a combination of apples. I personally like fuji, gala and applecrisp, use what you like etc.) (I fill the crockpot(6 quart), using about 20 small apples, or 15 medium apples, if you can get more in, do fill it up as full as you can. they cook down quickly)
