add sliced potatoes to a large bowl, cover with water and soak for 30 minutes. Remove potatoes from water and pat dry with a paper towel.
Combine dry ingredients in a gallon zip lock bag. In a large mixing bowl, add oil and sliced potatoes, toss to coat.
Add potatoes to cornstarch mixture and shake to coat. Place potatoes on cookie sheet, spread out so they are not touching, bake 30 minutes or until tender. Turn potatoes after 15 minutes of cooking time.
