Combine vegetable oil, vinegar, sugar, salt and celery seeds in a saucepan and heat until sugar total dissolves. Stir very well. Let cool. (To save time, you can pour the mixture into a small mixing bowl and set this bowl onto a larger mixing bowl containing ice water.) When cool, use a whisk to emulsify the oil/vinegar/sugar mixture to insure even distribution when added to the cabbage.
Shred the head of cabbage. Chop the onion to a fine chop. Combine.
Pour liquid over the cabbage and toss gently. Cover and chill before serving.
- Add more or less of any ingredient to vary the taste. White vinegar can be substituted for cider vinegar. Other types of onions can be substituted for sweet onion. Original recipe called for more onion.
