Place the onion quarters, the bay leaves, and the chicken thighs in a large pan, cover with water and simmer for 90 mins to 2 hrs
Slice the leeks, half the button mushrooms then slice and quarter the carrots
Roll the first puff pastry out and cover the inside of the pie dish
Take the large pan with the chicken thighs off the heat, take out the thighs and let them cool
Place some olive oil and butter in a pan on a low heat, then add the leeks, mushrooms and carrots
Heat the oven to 180 degrees centigrade
Sieve the stock from the chicken thigh pan, and separate the chicken meat from the bones and gristle
Add the cashew nuts and the spring onions to the pan of vegetables
Add the flour to the pan and mix into the veg
Add the chicken meat, the wholegrain mustard and the creme fraiche to the pan
Add the chicken stock to the pan
Season, add the thyme and nutmeg and reduce to a sauce
Place the puff pastry-lined pie dish into the oven for 10-15 mins
Roll the other puff pastry out to provide a lid to the pie, cut out some shapes with any spare pastry
Take out the pie dish, add the pie filling, and top with the pastry top and shapes
Beat an egg in a cup and brush over the pastry top
Put in the oven for 45 minutes
Serve with mash and fresh vegetables
