Clean off the extra fat from the cow tongue. Cut the garlic cloves in half. Cut slits into the tongue and stuff it with the garlic cloves. The cloves should be cut smaller so they cook through.
In a cup, mix the rest of the ingredients to taste. I use < 1 table spoon for each of the herbs.
In a ziplock bag, marinade the cow tongue with the onions, sauce and bay leaves overnight. In the morning, Put everything in a crock pot (after letting it sit out to come to room temperature) and cook on low for 8-10 hours. When it's cooked, you will need to take the skin off the tongue before eating. Cut a slit across the tongue and the skin should come off easily. Slice the cow tongue and put it back in the crock pot for another hour on low heat. This will help more flavor absorb in.
