Try this slow cooked green beans recipe.
Add the oil in a medium, heavy saucepan.
Add the onion, garlic, pepper and cayenne. Saute until tender, about 3 minutes.
Add ham hock and chicken broth. Bring to a boil. Reduce heat and simmer about 45 minutes to 1 hour.
Add beans and adjust broth/water if necessary. Return to boil and simmer for an addition 60-90 minutes (adjust seasoning, adding salt if necessary, after about 45 minutes). Remove from the heat and serve with the cooking liquid.
