Peel and core 8-10 medium apples*. Cut into chunks and throw into slow cooker. Add cinnamon stick, brown sugar, nutmeg, squirt of lemon and a small peel from a lemon. Set cooker to low for 6 hours, stirring occasionally. After about 4-5 hours you can start mushing the apples a bit with the spoon. After 6 hours remove the cinnamon stick and lemon peel (if you can find it). Using an emulsifier will give you a smooth apple sauce while using a potato smasher will give you a slightly chunky apple sauce. Let cool and jar.
*Apple type doesn't matter much in my opinion, I just think a mix is best. I used Cortlands, Liberties, and Macintosh.
