A simple and easy adaptation of Osso Buco using chicken and a slow cooker. It's not very traditional but it's yummy.
Place chicken breast in slow cooker. Cover in chopped onion, carrot and and celery. Mix all other ingredients in a bowl and pour over chicken and vegetables. Leave aside some parsley to sprinkle on at the end. Cook on low for 8 hours.
Remove chicken breasts from slow cooker serve on top of rice, rissotto, or other starch of your choice. Ladle sauce and vegetables over chicken and starch sprinkle with parsley.
