Chop veggies and add to pot with 1 cup of beef broth. Cover and let veggies sweat 1 hour. Season beef with salt and pepper.
Heat olive oil in large skillet over medium high. Brown beef and drain.
Add beef, bacon, beef stock, Worcestershire sauce, and seasonings.
Cover and cook 8 hours on low.
