Sweet caramelized onions and mushroom gravy give this slow cooker beef stew a great twist.
Spray a 4-5 quart slow cooker crock with non stick spray. In a 10 inch skillet, melt butter over medium low heat. Add onions and sugar and cook 30-35 minutes, stirring frequently, until onions are deep golden brown and caramelized. Stir in thyme and stew meat. Increase heat to medium and brown the stew meat. When browned, pour contents of the skillet into the slow cooker.
In a medium bow, mix broth and gravy mix. Pour liquid over meat mixture in the slow cooker. Top with carrots and potatoes. Cover and cook on low for 8-9 hours or until meat and vegetables are tender.
Turn slow cooker to high, add frozen peas, return cover to crock and cook 15 more minutes or until peas are heated through.
