Southwest, Ground Turkey, Quinoa
1. Heat oil in a pan, sautee the onion and garlic
2. Add turkey to the pan and brown, drain grease, add to slow cooker
3. Add quinoa (rinsed, uncooked), black beans (drained and rinsed), corn, ro-tel, salsa
4. Chop up the bell pepper, and jalapeno, add to the slow cooker
5. Add water, enchilada sauce, chili powder, and cumin
6. Stir everything together, cover and cook for 3-3.5 hours
7. Remove lid, stir everything, add cheese, and chopped cilantro
8. If wanted top with sour cream, green onions, salsa, more enchilada sauce, and cilantro
