Combine grits and water in a slow cooker. Cook on low for 7-8 hours.
Add cream, cheeses, salt and pepper and stir to combine.
Toss shrimp with olive oil, garlic, salt and pepper. Spread out on baking sheet. Cook for 6-8 minutes or until shrimp is pink, opaque and cooked through.
Add butter pats to baking sheet and toss shrimp.
Spoon grits into bowls and top with shrimp.
