Combine Chicken Breast, diced tomatoes, 1/2 cup chicken stock. chili powder, salt and cumin to slow cooker. Make sure Chicken is covered with liquid. Add additional stock if needed. Cover and and cook on low 3 to 4 hours.
Remove lid, ad 1/2 more stock, beans, corn and rice. Mix well. Cover and cook 2 to 4 more hours. Check Rice periodically in the last hour of cooking. If too dry add more stock. Cooking is done when rice is tender.
Serve in bowls with cheese, cilantro and salsa to top.
