I have a large slow cooker and this fills it. The potatoes and carrots can be left out of the slow cooker and roasted in the oven instead.
Place quartered red potatoes and carrots on bottom of slow cooker. Put corned beef roast on top. Sprinkle on seasoning packet. Pour beer around the beef. Cook on low 6-7 hours. Add cabbage wedges and cook an additional 2-3 hours on low.
I like mustard on my corned beef, but the kids don't. If you want to kick this up a bit slather the top of the roast with dijon mustard then add the seasoning packet.
