1. In large skillet over med-high heat, heat 1 Tbsp oil. Add chicken, salt & pepper; sear until golden brown.
2. In a large slow cooker, toss potatoes with remaining oil, butter, garlic, thyme, parsley & Parmesan. Season generously with salt & pepper. Add chicken, cook on high for 4 hours or low for 8 hours. Garnish with Parmesan before serving.
