1- Put turkey in slow cooker. sprinkle both sides with salt/ Add onion, 1/2 cup broth, olives, tomatoes, lemon juice, greek seasoning & pepper. Cover and cook for 4 hours.
2- Transfer turkey to platter and let rest; covering loosely with foil. 20 minutes.
3- Meanwhile, strain remaining cooking liquid from slow cooker through a fine mesh sieve into a large liquid measuring bowl ( reserving solids in sieve). Add enough remaining broth to measure 2 cups. Pour mixture into saucepan and bring to a simmer. Whisk together flour and 1/4 cup chicken broth into small bowl until smooth, then whisk into simmering broth. Continue to simmer, whisking often, 2 minutes. Stir in reserved solids from sieve. Slice turkey about 1/4" thick and serve with sauce on the side.
