Suggest a better descriptionIn a large jug, add the chicken stock, curry paste and ginger. Stir until well combined. Add to slow cooker along with lentils, onion and sweet potato. Cook on low for 4-5 hours or until lentils are soft and sweet potato is tender.
Stir lentils occasionally during cooking time if possible. Add salt and pepper to taste before serving. Serve with rice and garnish with coriander and a dollop of Greek yoghurt.
