2. Cover and cook until beans are tender on low for 7-8 hrs or on high for 4-5 hrs.
3. Twenty min before serving, discard thyme stems, add greens. Cover and cook until greens are tender, 15-20 min. Add vinegar and salt and pepper to taste.
